Ragi Biscuits | no egg one bowl recipe

These Ragi Biscuits are melt-in-the-mouth delicious. They are sweetened with jaggery and made using a handful of ingredients. Ideal for children and adults alike!

Very few things can make me as happy as the smell of baking something at home! I must say that these cookies have been a super hit with the little one too, motivating me to make them more.

With a few healthy substitutions, I’ve made a healthier version of our indian bakery butter biscuits in these ragi biscuits that you can enjoy without any second thoughts and also offer to your kid. The only downfall is once you’ve had one, you’ll keep going back for another until the whole box is over and you will keep making these on repeat1

Ingredients to make Ragi Biscuits

Flour – we will use two kinds of flour in this recipe – Ragi and whole wheat flour, you can also substitute with maida/all-purpose flour. I have used both homemade and storebought ragi flour in this recipe during my trials and both came out beautifully.

Jaggery – we will use jaggery to sweeten these biscuits. If you have access to powdered jaggery, that is best suited. Otherwise, powder jaggery in a blender like I did and use them.

Butter– tp bind the cookies and give it a delectable flavour. you can also substitute this with ghee.

Cardamom – i love jaggery and cardamom together so instead of the usual vanilla, we use cardamom in these biscuits.

Baking soda – for a little help to spread these biscuits.

They’re perfect to make over the weekend and pack in snack boxes or to nibble on as an after-school snack. They’re also fantastic on the side with a coffee or tea. This recipe is the perfect way to introduce ragi to your child if you have not done so yet!

Ragi Biscuits

reminding us of indian butter biscuits, these ragi biscuits are healthier made with ragi and wholewheat flour, sweetneed with jaggery and taste delicious.

Ingredients

  • 1/2 cup whole wheat flour regular atta
  • 1/2 cup ragi flour storebought or homemade
  • 100 grams butter unsalted
  • 1/3 cup powdered jaggery add 1-2 tbsp if you like it sweeter, please see notes.
  • 1 tsp baking soda
  • 1/2 tsp cardamom powder

Instructions

  • Melt butter to room tempratur. Add the powdered jaggery and mix till there are no lumps.
  • Add cardamom and mix well.
  • Sieve in whole wheat flour, ragi flour and baking soda.
  • Mix throughly using a spatula. It will seem dry, but the jaggery will melt and bring the dough together.
  • Chill the dough for 20 minutes. This helps to firm the dough a bit and makes it easier to shape and also prevents the biscuits from spreading too much. You can keep the dough chilled for a day or overnight too and bake the next morning.
  • Spread the dough on some baking paper to about 1 inch thickness ( do not make it too thin) and cut using a cookie cutter and place on a baking tray.
  • Alternatively, roll the dough into balls and flatten to form biscuits.
  • Arrange on a baking tray and bake in a preheated oven at 180C for 10-12 minutes. Remember to leave enough space around the cookies so they can spread. It will still be soft to touch but corners will be set.
  • Cool well and transfer to an airtight container. These last well for upto a week in room temp but they will be long over before that!

Notes

  • these biscuits are not very sweet. if you like your biscuits sweet, i recommend adding 1-2 tbsp more of jaggery powder. as the dough does not contain egg, you can taste it and add too. 
  • the butter can be replaced with ghee.

    Help! Followed the recipe exactly using a 250 ml for 1 cup measure and it was too dry. Even after chilling, it was crumbly. Added a bit of coconut oil and they formed well. Baking took longer than 12 min. Not sure I have the right consistency. Saved the rest in the fridge for a batch after you advise me on how to get it right.

    Baking powder works better? There is no acidic ingredient for soda.

      we are not looking for rise in this recipe, soda helps it to spread a bit.
