Looking for a last-minute Diwali sweet? Make this easy, delicious, unique Rasamalai Fudge. It will take 10 minutes because we need to chop some nuts, grease a pan, and grate some white chocolate. But, the active cooking is only 90 seconds in the microwave. Probably 5 minutes on the stove. And, all ingredients are available in your nearby supermarket.
Every year, I make grand plans for Diwali and try something new. Sometimes, it’s a great hit and I repeat it for many years to come like the Gulab Jamun cake. And, some other times it quietly decides to be in the back of my blog ( and mind) like these Baklava Cookies. This year is no exception however with a little one pottering around, my ideas have to wait. I made this fudge in 2022 when I was pulling a pregnant belly and could hardly stand without panting. This was ideal – because it was such low effort and best of all, everyone I gave it to loved it!
Rasamalai Fudge
Ingredients
- 1 cup white chocolate chopped i used a 180grams nestle white chocolate bar grated
- 2 tbsp condensed milk
- 1 tbsp hot milk
- 6 strands of saffron
- 2 tsp milk powder
- 1 tsp unsalted butter
- few drops rasamalai essence
- 1/4 cup coarsely chopped nuts pistachios and almonds
- a pinch of cardamom powder
Instructions
- To the hot milk, add the safffron and let it sit for 10 minutes.
- Grease a 8 * 8 pan and set aside. Chop nuts and grate/chop the white chocolate
- To a microwave safe bowl, add the condensed milk, saffron soaked hot milk, cardamom powder and cook for 1 minute. Cook for 30 seconds, take it out, stir and keep inside again for 30 more seconds
- To the warmed milks, add the chocolate, milk powder, butter and let it all melt in. Stir to combine and place in the microwave for 30 seconds if needed to completely melt.
- Add nuts and stir well to combine. Pour into a greased tin, garnish with more nuts, rose petals and let it set for 1-2 hours.
- Cut into pieces and serve.
Notes
- To make without a microwave, simply add the ingredients mentioned to microwave into a pan and cook on a low flame for 2 minutes.
- Add the butter, and milk powder and combine well. The whole process should take less than 5 minutes. Do not overcook the fudge.
- If it is overcooked, it will have a mild barfi texture and still taste delicious.
A note on the essence – it’s a beautiful addition but I’ve also made it without the essence and it’s still very flavourful and smells incredible! So don’t let that stop you from trying it.
