Easy Eggless Orange & Chocolate Oats Energy Bars

These oats energy bars are nutritious and delicious! They're packed with nuts, oats, naturally flavoured with orange zest. They make for a great snack or breakfast on busy days!

Ingredients

Dry Ingredients

  • cups rolled oats
  • ¾ cup whole wheat flour regular atta
  • ¼ cup chia seeds
  • ¼ cup chopped almonds
  • ¼ cup chopped cashews or pistachios
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup chocolate chips

Wet Ingredients

  • ½ cup melted butter or ghee
  • ¾ cup brown sugar or coconut sugar
  • 2 tbsp yoghurt (thick homemade works fine)
  • 2 tbsp jam orange or apricot
  • 1 tbsp orange zest

Topping

  • 1/4 cup melted chocolate
  • 1 tsp toasted oats toast oats in a dry pan until it is slightly brown
  • 1 tsp chopped nuts almonds or pistachios

Instructions

  • Grease a 8 inch square pan with baking paper and set aside
  • In a large bowl, combine all the dry ingredients - oats, whole wheat flour, chia seeds, nuts, baking powder, baking soda and chocolate chips.
  • In a smaller bowl, combine all the wet ingredients - brown or coconut sugar, yoghurt, melted butter or ghee, jam and orange zest
  • Combine both and mix until just combined. Transfer to greased baking dish and press well into the corners.
  • Optionally, spread a thin layer of jam on top before baking.
  • Bake at 180°C for 15- 20 minutes until the top is slightly golden.
  • Remove from oven and spread a layer of thin melted chocolate and top with toasted oats, nuts. Chill for 2 hours and serve.
