Rasamalai Fudge

a delicious white chocolate fudge with flavours of cardamom, saffron garnished with pistachio, rose petals reminding you of a rasamalai. this is a quick 10 minute dessert made in the microwave.

Ingredients

  • 1 cup white chocolate chopped i used a 180grams nestle white chocolate bar grated
  • 2 tbsp condensed milk
  • 1 tbsp hot milk
  • 6 strands of saffron
  • 2 tsp milk powder
  • 1 tsp unsalted butter
  • few drops rasamalai essence
  • 1/4 cup coarsely chopped nuts pistachios and almonds
  • a pinch of cardamom powder

Instructions

  • To the hot milk, add the safffron and let it sit for 10 minutes.
  • Grease a 8 * 8 pan and set aside. Chop nuts and grate/chop the white chocolate
  • To a microwave safe bowl, add the condensed milk, saffron soaked hot milk, cardamom powder and cook for 1 minute. Cook for 30 seconds, take it out, stir and keep inside again for 30 more seconds
  • To the warmed milks, add the chocolate, milk powder, butter and let it all melt in. Stir to combine and place in the microwave for 30 seconds if needed to completely melt.
  • Add nuts and stir well to combine. Pour into a greased tin, garnish with more nuts, rose petals and let it set for 1-2 hours.
  • Cut into pieces and serve.

Notes

  • To make without a microwave, simply add the ingredients mentioned to microwave into a pan and cook on a low flame for 2 minutes. 
  • Add the butter, and milk powder and combine well. The whole process should take less than 5 minutes. Do not overcook the fudge. 
  • If it is overcooked, it will have a mild barfi texture and still taste delicious.
